Honey Cranberry Butter
Perfect for holiday feasts, this festive honey cranberry butter brightens up any table. It’s a delightful mix of tangy and sweet that pairs seamlessly with dinner rolls. And it’s delicious for breakfast on crisp mornings spread on toast or an English muffin. In a bowl, mix together 1 cup of softened, unsalted butter, 1/4 cup of Bee America Orange Blossom Honey, 1/3 cup of finely chopped dried cranberries, 1 teaspoon of orange zest, and a pinch of salt. Package in a wide-mouthed glass jar. Can be stored up to two weeks in the refrigerator.
Honey Peanut Brittle
Peanut brittle made with honey has that perfect combination of sweet and salty that is incredibly yummy and addictive. When made in a microwave, it’s a breeze. Mix together 1/4 cup Bee America Pioneer Honey, 1/4 cup light corn syrup, 1 cup sugar, a pinch of salt, and 1 cup of peanuts into a microwave-safe bowl. Cover and microwave on high for 5 minutes and then stir. Add in 1 teaspoon of butter and then microwave 1 minute more. Stir again. Add in 1 teaspoon of vanilla, stir and then add in 1 teaspoon of baking soda. Stir until well combined and the mixture is light and foamy. Pour mixture onto a baking sheet that has been coated with a nonstick spray. Wait until it is solid (about an hour) before breaking apart and putting into storage containers.
Honey Roasted Nuts
Honey roasted nuts make the ideal hostess gift. They can be put out at the party as a tasty appetizer or savored later by the grateful recipient. Plus, they are super easy to make and can be readily customized with different spices. In a small saucepan over low heat, melt 1/2 cup of Bee America Liberty Honey with 1/3 cup of unsalted butter. Pour mixture over 6 cups of mixed nuts (your preference as to type) and stir to coat. Spread mixture onto a cookie sheet and sprinkle with your seasonings of choice: salt, sugar, cinnamon, chili powder, paprika, etc. Bake at 350 °F for 15 minutes or until golden, stirring often. Let cool completely before storing in containers.
