Why Are There Different Kinds of Honey?

The color and flavor of honey differ depending on the honeybee’s nectar source, which are flower blossoms on trees and plants. In the United States, there are more than 300 different kinds of honey originating from such sources as tupelo trees in the swamps of Florida, star thistle weeds in Michigan and tulip poplar trees in Maryland. Typically, the lighter colored honeys are milder in flavor, while the darker honeys are usually more full-bodied in flavor.
